I Love My Ducklings — Chicken Recipes

If you are lucky enough to afford chicken here are some great ideas:

Chicken Pot Pie
Chicken with Tomato Basil Butter
Feta Topped Chicken

Chicken Pot Pie

A great idea when you eat alone is to make Pot Pie like a small galette.

There are tons of ways to make pot pie. I usually mix a couple of recipes.
A great one is the Williams-Sonoma recipe.
Here’s a simple recipe:

You’ll Need:
Frozen Vegetables
Bisquick
Chicken Gravy
Butter
Chicken

Directions:
1. Melt butter in frying pan. Cook chicken over medium heat until done.
2. Meanwhile, cook gravy.
3. Pour gravy, chicken and vegetables into glass baking pan.
4. Mix Bisquick following directions for biscuits, add to top of chicken/vegetable mixture.
5. Cook in oven at 375 until done, about 30 minutes.

Note: if you want to use potatoes, boil them before adding them to the vegetable/chicken mixture.

Here’s another super easy and yummy version

You’ll Need:
Alfredo Sauce
Puff Pastry Sheet
Frozen vegetables
Chicken
Butter

Directions:
1. Melt butter in frying pan. Cook chicken over medium heat until done.
2. Meanwhile, cook puff pastry according to directions.
3. In a medium sauce pan dump in alfredo sauce, add vegetables, cook over low heat.
4. When chicken is done add it to alfredo sauce.
5. When everything is done, pour sauce over pastry and eat. YAY.

Chicken with Tomato Basil Butter

Step 1.

You’ll Need:

Chicken
3 Tbsp Tomato paste
3 Tbsp Softened butter
1 to 2 cloves minced garlic
1 Tsp basil
1 Tsp Italian Seasoning

Step 2

Directions:

1. Cook chicken however.
2. In small bowl mix everything else.
3. Put mixture on plate on top of chicken.
4. Eat.
